Ingredients:
- 2 lbs (900g) beef ribs (or pork ribs)
- 2 tbsp vegetable oil
- 1 large onion (chopped)
- 3 garlic cloves (minced)
- 2 cups beef broth (or chicken broth)
- 1 cup red wine (optional, or extra beef broth)
- 2 tbsp tomato paste
- 1 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp brown sugar
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- 4 medium potatoes (peeled and cut into chunks)
- Salt and pepper to taste
- Fresh parsley (chopped, for garnish, optional)
Instructions:
1. Prepare the Ribs:
- Preheat your oven to 325°F (163°C).
- Season the ribs generously with salt and pepper.
2. Brown the Ribs:
- Heat vegetable oil in a large Dutch oven or oven-safe pot over medium-high heat.
- Add the ribs in batches, if necessary, and brown them on all sides. This should take about 5-7 minutes per batch. Remove the ribs and set aside.
3. Sauté the Aromatics:
- In the same pot, add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for another minute, until fragrant.
4. Deglaze the Pot:
- Stir in the tomato paste and cook for 1-2 minutes.
- Pour in the red wine (if using) and scrape up any browned bits from the bottom of the pot. Let it simmer for about 2 minutes.
- Stir in the beef broth, soy sauce, Worcestershire sauce, and brown sugar.
5. Add Herbs and Ribs:
- Add the dried thyme, dried rosemary, and bay leaves to the pot.
- Return the browned ribs to the pot, making sure they are mostly submerged in the liquid.
6. Braised in the Oven:
- Cover the pot with a lid or aluminum foil.
- Place in the preheated oven and braise for 2.5 to 3 hours, or until the ribs are tender and the meat is falling off the bone.
7. Prepare the Potatoes:
- About 45 minutes before the ribs are done, add the potato chunks to the pot. Make sure they are submerged in the liquid.
- Continue to braise until the potatoes are tender, about 45 minutes.
8. Finish and Serve:
- Remove the pot from the oven.
- Discard the bay leaves and adjust seasoning with salt and pepper as needed.
- Garnish with chopped fresh parsley if desired.
