Braised ribs with potatoes and onions

Ingredients:

  • 2 lbs (900g) beef ribs (or pork ribs)
  • 2 tbsp vegetable oil
  • 1 large onion (chopped)
  • 3 garlic cloves (minced)
  • 2 cups beef broth (or chicken broth)
  • 1 cup red wine (optional, or extra beef broth)
  • 2 tbsp tomato paste
  • 1 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • 4 medium potatoes (peeled and cut into chunks)
  • Salt and pepper to taste
  • Fresh parsley (chopped, for garnish, optional)

Instructions:

1. Prepare the Ribs:

  • Preheat your oven to 325°F (163°C).
  • Season the ribs generously with salt and pepper.

2. Brown the Ribs:

  • Heat vegetable oil in a large Dutch oven or oven-safe pot over medium-high heat.
  • Add the ribs in batches, if necessary, and brown them on all sides. This should take about 5-7 minutes per batch. Remove the ribs and set aside.

3. Sauté the Aromatics:

  • In the same pot, add the chopped onion and cook until softened, about 5 minutes.
  • Add the minced garlic and cook for another minute, until fragrant.

4. Deglaze the Pot:

  • Stir in the tomato paste and cook for 1-2 minutes.
  • Pour in the red wine (if using) and scrape up any browned bits from the bottom of the pot. Let it simmer for about 2 minutes.
  • Stir in the beef broth, soy sauce, Worcestershire sauce, and brown sugar.

5. Add Herbs and Ribs:

  • Add the dried thyme, dried rosemary, and bay leaves to the pot.
  • Return the browned ribs to the pot, making sure they are mostly submerged in the liquid.

6. Braised in the Oven:

  • Cover the pot with a lid or aluminum foil.
  • Place in the preheated oven and braise for 2.5 to 3 hours, or until the ribs are tender and the meat is falling off the bone.

7. Prepare the Potatoes:

  • About 45 minutes before the ribs are done, add the potato chunks to the pot. Make sure they are submerged in the liquid.
  • Continue to braise until the potatoes are tender, about 45 minutes.

8. Finish and Serve:

  • Remove the pot from the oven.
  • Discard the bay leaves and adjust seasoning with salt and pepper as needed.
  • Garnish with chopped fresh parsley if desired.
